and what fueled me...

Forgot to add this in the previous post! This is a new bar I have been playing with - simple, delicious, and very energizing (don't let the espresso scare you away - the caffeine hit is very welcome during times of exertion!!) If you love coffee and chocolate, this one's for you! (adapted from the delicious Espresso Bars from Elana's Pantry)

Espresso Speed Bars

1 ½ cups pecans, lightly toasted

¼ cup cacao powder

2 teaspoons organic espresso, finely ground

10 large medjool dates, pitted

1 tablespoon vanilla extract

10 drops stevia

1 tablespoon brown rice syrup or raw honey

Blend pecans, cacao and espresso in food processor until finely ground

Add pitted dates and process until blended into dry ingredients

Process in vanilla, stevia and honey until well combined

Press mixture into an 8x8 inch pyrex dish, add a little water if your batter is crumbly when squares handling

Freeze for 2 hours, then cut into squares.
