So to further the previous post...did you know that most tomatoes have jumped upwards of 300% in price lately; and climbing - due to the "Act of God" winter in Mexico, Texas and Florida...hmmm. Watch them coming off of the menu in restaurants, and especially off of fast food sandwiches. Try using quality canned (Eden BPA - free) or jarred tomatoes, or how about salsas instead - their prices have not jumped. Seems though, it's all on the rise.

And just when you were thinking how frightening that is...and I know you were...check this out - the future of chocolate. Is nothing sacred anymore??????

A couple more recipes I rely on - when you NEED that chocolate hit, and can't get yourself to the store for your fair trade, organic dark chocolate bar ;) Make 'em while you still can...

Favorite Raw Cookies
(I will be bringing these to the spin test tonight - a reward for our efforts...)
Throw all of the following into a processor, whirl around until mixed and dough-y, and form into tiny balls to pop in your mouth...
  • 1/2 cup soaked almonds (soak overnight in a good amount of water)
  • 1/2 ripe avocado
  • 1/2 cup raw coconut
  • 2 Tb. raw honey
  • 3 heap Tb of raw cocoa powder
So easy, so good.
And another chia pudding...

Chocolate Chia Pudding
  • 2 Tb raw cocoa powder - more or less to taste (I like more...)
  • 4Tb raw honey - more or less to taste - or use Stevia or brown rice syrup
  • 1/2 cup chia seeds
  • 1 ripe avocado
  • 2 Tb EV Coconut oil
  • 2 cups pure water
Blend all in a blender a couple mins.- adjust taste - you can save out some of the chia seeds to add at the end so that the pudding is more like a tapioca-type of thing... Chill in serving bowls - makes 4 ish, depending on your needs. I put it all in a mason jar, chill it down, and then nosh on it bit by bit - lasts a few days in the fridge ;)
