Energy Bread!


well, I continue to work on the big race report - slowly coming along...maybe soon it will be done. In the meantime - this is for Nicky! Eat your breakfast!! :)

Sarah's Hemp Energy Bread

1 cup whole spelt flour
1/2 cup amaranth flour
1/2 cup hemp flour or hemp protein powder
1/4 cup chia seed
4 very ripe bananas
1/3 cup maple syrup
1/3 cup brown rice syrup
1/3 cup soft coconut oil
1 1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp sea salt
1/2 tsp cinnamon
1/4 tsp fresh nutmeg
Opt...scant 1/2 cup of dairy free chocolate chips, or walnuts, or raisins, or chopped dates...

Mix all the dry together. Mix all the wet together. Combine the two. Stir in options.
Bake at 350F as either a loaf (40-45 mins.) or as muffins in lined muffin cups (30 mins.)
